My dinnertime carpool schedule makes it tricky to prepare a whole dinner from scratch, but I'd prefer not to get takeout every night! Can anyone suggest any quick meals I can put on the table in a pinch?
Meals in a pinch
When I did my dinner time carpool, Here is what I did. The night before I would Make spag for diner. The next night (car pool) I just reheated the sauce then the noodles. It actually tasted beter than the night before. You can also try grilled cheese sand with a can of soup. ( the next time you make soup make a little extra and freeze. then just place in the fridge the night before your carpool.)

Parent Talk--Crock Pot
My suggestion for dinner in a pinch is my go to favorite--"Salsa Chicken" place frozen chicken breasts in crock pot and cover with salsa (the amounts depend upon the size of your family-typically one breast per person, one jar of salsa per 4 breasts) and cook on low for 8 hours. Once you return, shred the chicken in the crock.
The shredded chicken can be served a variety of ways--in tortilla shells, over rice, pasta, etc. You can top it with cheese, or get creative and top it with sour cream, ranch dressing, etc.
Leftovers are good too!
