Cinnamon Apple Pockets

The secret to these crispy-sweet little pies is grating the apples for the filling so they soften in minutes. Kids will love to help make the cinnamon sugar and shape the pockets.
Makes 2 servings
Ingredients
2 slices whole-wheat or white bread
1/2 Golden Delicious or Jonagold apple
1 tablespoon sugar
1/2 teaspoon ground cinnamon
2 teaspoons butter or vegetable oil
Directions
- Cut off crusts from bread slices; slightly flatten and enlarge each slice by pressing with fingers.
- Peel and core the apple half. Grate into bowl.
- In another small bowl, combine sugar and cinnamon. Add 2 teaspoons of this mixture to apples, tossing to combine.
- Put half of the apple mixture in the center of each slice of bread, then fold bread in half over apples. Sprinkle both sides with remaining cinnamon sugar.
- Heat butter or oil in a small skillet over medium-low heat; when hot, add apple pockets and top with second skillet or saucepan to weigh them down.
- Cook for two minutes per side, or until nicely browned and heated throughout. (Alternatively, brush pockets with butter and cook on two-sided electric grill.)
