Dried fruit adds color and just the right amount of sweetness to this super-fast treat. Serve alone or add a spoonful of vanilla ice cream to melt into the warm apples.
Makes about 2 servingsIngredients
1 large sweet apple (McIntosh, Red Delicious, Golden Delicious, Gala or Fuji), peeled and thinly sliced
1/3 cup sweetened dried cherries or cranberries
1/4 cup water
2 teaspoons butter
1/4 teaspoon ground cinnamon
Directions
1. In microwave-safe bowl, toss together apple slices, cherries or cranberries, water, butter and cinnamon.
2. Cover with small plate or plastic wrap, and microwave on high until apples are very tender (5 to 10 minutes depending on type of apple), adding more water if needed. Serve warm.
