Turkey, Cranberry and Cheddar Melts

Makes 4 servings

Ingredients
3 tablespoons butter (at room temperature)
8 slices sandwich bread
6 tablespoons cranberry sauce
8 ounces sliced turkey
4 ounces Cheddar cheese, thinly sliced

Directions

1. Spread butter on one side of each slice of bread. Place four slices, buttered side down, on work surface and spread unbuttered side with cranberry sauce. Top with turkey, cheese and remaining bread, buttered side up.

2. Heat a nonstick skillet over medium-low heat. Add sandwiches, cover and cook (in batches, if necessary) for about 3 to 5 minutes per side, or until bread is golden brown and cheese is melted.

3. Cut sandwiches in halves (or quarters) and serve.
