Scrumptious Potato Smash

Smashed potatoes are a treat for kids to make and eat. Pop the potato in the microwave instead of the oven to cut down on prep time, then let your kids mash to their hearts’ content. Instead of adding sour cream or butter -- both are full of saturated fat -- mash with avocado and top with salsa.

Makes about 1 serving

Ingredients
1 medium russet baking potato
1/4 medium avocado
3 tablespoons salsa

Directions
1. Wash potato, then pierce it with a sharp knife or fork in several spots throughout top and bottom.

2. Microwave until thoroughly cooked, about 6 to 8 minutes. (Potato is done when sharp knife passes easily through its center without detecting any hardness.)

3. Coarsely chop and lightly smash potato and avocado.

4. Top potato and avocado mixture with salsa and serve.
