Pepperoni Pizza Muffins
One of kids’ favorite foods turns into a calcium- and protein-rich snack when you make it with whole-grain English muffins and low-fat turkey pepperoni slices.
Makes 2 servings
1 whole-wheat English muffin, split
1/3 cup pasta sauce
6 slices turkey pepperoni
1/4 cup shredded mozzarella cheese
2 tablespoons finely chopped mushrooms (optional)
1. Divide pasta sauce between muffin halves.
2. Spread each half with pasta sauce.
3. Top with pepperoni, cheese and mushrooms.
4. Microwave for 1 to 2 minutes, or until hot and cheese is melted.
