Cinnamon Apple Pockets

The secret to these crispy-sweet little pies is grating the apples for the filling so they soften in minutes. Kids will love to help make the cinnamon sugar and shape the pockets.


Makes 2 servings

Ingredients
2 slices whole-wheat or white bread
1/2 Golden Delicious or Jonagold apple
1 tablespoon sugar
1/2 teaspoon ground cinnamon
2 teaspoons butter or vegetable oil

Directions

  1. Cut off crusts from bread slices; slightly flatten and enlarge each slice by pressing with fingers.
  2. Peel and core the apple half. Grate into bowl.
  3. In another small bowl, combine sugar and cinnamon. Add 2 teaspoons of this mixture to apples, tossing to combine.
  4. Put half of the apple mixture in the center of each slice of bread, then fold bread in half over apples. Sprinkle both sides with remaining cinnamon sugar.
  5. Heat butter or oil in a small skillet over medium-low heat; when hot, add apple pockets and top with second skillet or saucepan to weigh them down.
  6. Cook for two minutes per side, or until nicely browned and heated throughout. (Alternatively, brush pockets with butter and cook on two-sided electric grill.)
